In no particular order since it is so hard to rank them, my favorites are:

Rocko's Modern Life
Exo-Squad
Fairly Odd Parents
Heathcliff (the DiC version, not the earlier Ruby Spears version)
Venture Bros.
Aqua Teen Hunger Force
Time Squad
Beavis and Butthead
Eek the Cat (and the Terrible Thunder Lizards!)
The Critic
Freakazoid
Underdog (There's no need to fear! Underdog is here!)
Rocky & Bullwinkle
The Real Ghostbusters
Teenage Mutant Ninja Turtles (the original series)
Batman: The Animated Series
The first 100 episodes or so of Dragonball Z (After Freeza dies it all goes rapidly downhill in my opinion)
The Simpsons
Futurama
Family Guy
David the Gnome
Reboot
1960's Johnny Quest

I am sure that I am forgetting some great cartoons here, but oh well. While my favorites list includes some givens, such as The Simpsons and The Critic, hopefully I have listed some more uncommon choices here to that will jog some memories. There are a lot of Hanna Barbera cartoons out there that were pretty good, but I don't know if most of them quite make my "best" list. Also, I am only counting actual made for TV cartoon series here, because if you count old golden age theatrical shorts that they now show on TV today, the original Tom & Jerry shorts would kick the butt of anything on the air hands down! Enjoy my list!
There's a 68.71% chance that I'm right.

Oh my god! I forgot all about Billy and Mandy! However, I don't think it would make it onto my top 5.

Billy and Mandy is a brilliant show and does NOT get the credit it deserves.

Agreed. I used to hate it, but as I watched it more and more I just fell in love with it. Grim is so cool. :)

#1 Favorite animated show: Gargoyles

I loved this show when it was on, and now that its been (partially) released on DVD, I'm loving it again.

I don't know if you've heard this, but co-creater and co-executive producer Greg Weisman is writing a comic book continuation of the series. It'll be the 3rd season he never got to do. Comes out in June! I can hardly wait.

I remember Gargoyles vaguely from my younger years, but I don't think I watched it very often. Recently I scoured the internet looking for stuff about the show, and now I want the first season DVD. Badly. Cartoons that can be mature like that just tickle my fancy, I guess.

Not to be confused with "adult" cartoons, which generally feature bad animation and innuendo. I'm not so big a fan o' those.
